There are a series of wonderful sounding dressage books that I have on my Amazon wish list. My specific question is this - are there any books that focus explicitly on the French classical training method, while being remotely understandable to a novice dressage rider?

Maybe some of the books I want to buy are about the French method, but perhaps they do not come right out and say so.

a very good reading list is here:

Jean Claude Racinet should be on your list (but a lot of his stuff is not available on amazon.uk, you have to buy from the states)
